Understanding the Differences Between Mycoproteins.Fungi are as diverse as animals or plants. Hence, mycoprotein is as broad a descriptive as plant protein. For example, soybean and wheat kernels are plant proteins but differ utterly and behave accordingly. In this sense, it is only natural that mycoproteins are equally different. In our recent mycotalk we explore the differences between mycoproteins.

@sarah_chabane Hmmm, if you "can", yes you probably can, but some mycoproteins would be better for some uses than others. Because they have different properties, and even tastes, forms, Mycoprotein A might fit better a certain application (say, fish replacement) , while Mycoprotein B might be a better fit for a completely different application (like dairy replacement)

Mycorena announced a revolutionary fat ingredient in 2021. They produced Mycolein, an animal-free fat that mimics real animal fat, using fungi. After optimizing their proprietary emulsion stabilization method, which enabled the development of this beneficial fat ingredient, the recipe has been thoroughly tested and verified, and it is now ready for market. Its distinct qualities allow it to behave similarly to animal fat, slowly melting while cooking and encapsulating and releasing flavor. It improves juiciness and flavor, and it can even produce marbled products. We are publishing an open letter with Quorn Foods urging the Nordic Nutrition Recommendations (NNR) committee to swiftly reconsider their recommendations on protein for the benefit of all Nordic consumers and our climate.Mycoprotein is well-proven to be a nutrient-packed source of complete protein and a win for the environment. Produced in a resource-efficient fermentation process that can be operated anywhere, it shames the climate footprints of animal and plant-based proteins. Despite these compelling facts, the NNR has insofar refused to acknowledge mycoprotein as a key food group in its own right. We view this as a significant disservice to consumers, whose ability to make well-informed decisions about their protein intake is restricted as a result.As joint pioneers in the mycoprotein space, Quorn Foods and Mycorena are standing by to provide our insights to this high-potential project on updating our nutrition recommendations in the Nordics.
