Few things are more important than the traditional Julbord (Christmas food buffet) in Sweden. People have it with their family on Christmas eve, but also with their colleagues at work and maybe even with their friends. It usually consists of A LOT of different meats and fish but also: a lot of food waste. The catering company Sopköket (the waste kitchen) based in Stockholm has decided to offer an alternative to this waste. This year you can order a Julbord made of products that otherwise would have been wasted by supermarkets and food shops from them. Their Christmas buffet contains up to 95% salvaged ingredients and they have a zero-leftovers vision eaning that they will provide doggy bags to the guests and/or take care of donating the food that is left to those in need.
