Nordic Food Waste Summit! 600,000 views! 💚 Princesses, politicians, food waste heroes all gathered under the same roof at the largest food waste conference in the Nordics so far. Some highlights: Filip Lundin shared how Sopköket is financially sustainable despite the time-consuming challenge of being circular, rescuing food, donating meals and creating jobs. He also highlighted our new free guide for professional kitchens to reduce food waste in collaboration with the Nordic Council of Ministers and EIT Food: greattastezerowaste.eu Markus Wahlgren from Stora Coop Visby shared how he runs a supermarket with close to zero food waste! A journey that our partners ICA Kvantum Södermalm and Coop are also sharing. A cocktail of solutions and a motivating top-down corporate culture is key! Selina Juul, one of our time's true food waste pioneers, shared her work with Stop Wasting Food in Denmark and internationally. Rosa S. Rolle, food waste leader at the Food and Agriculture Organization of the United Nations, shared various reasons for food waste in the food supply chain and their work to reduce food waste and hunger in the world. And FAO's and UNEP's shared responsibility for reducing food waste at UN level. Karl at Matsmart shared their journey to create the world's first e-commerce for rescued dry foods, which is now growing rapidly in Europe with a large amount of reduced food waste from retail and their own spin-off products "Motatos". Sharp-minded Matt Homewood shared concrete figures on food waste in the retail industry corporate level with specific examples of companies that have reduced waste and how. Karin Lindow at the Swedish Board of Agriculture shared important new studies on how much food actually becomes food waste before it reaches the stores. Data that has largely been missing in Sweden before. For example, according to their study, 1/3 of all carrots becomes food waste before they reach stores due to breakage, wrong size, and mold. 8% of all slaughtered cows and 3% of all pork, as well as a large part of by-products such as blood and offal, are already wasted at the farmer. This is a smaller amount than carrots, but with a greater negative climate impact in the form of CO2 emissions. She provided concrete suggestions on how to reduce food waste in primary production. Perhaps we can consider a diet rich in iron and the comeback of blood pudding at the dinner table? Other present leaders and food waste heroes included, among others, H.R.H. Crown Princess Victoria and Crown Princess Mary of Denmark. Rural Affairs Minister Peter Kullgren, Denmark's Minister for Food, Fisheries and Agriculture Jacob Jensen, Karen Ellemann, and Jonathan Eng at the Nordic Council of Ministers, Karin Fritz, Director General of the National Food Agency, as well as leaders from Coop, Arla, Lidl, Orkla, Fazer, Axfood, ICA, and many, many more. The food was served by our friends at K-märkt with Jens Dolk, and the conference was organized by sustainability queen Åsa Sandberg The entire broadcast is saved, see the link in the comments. Much more needs to be done! 40% of all food in the world is wasted as food waste, corresponding to 10% of all the world's CO2 emissions. We need to become better at collaborating, sharing information, and adapting legislation. Let this be the start for fast action and more collaboration. Together, we can! 💚

When the restaurant Sopköket goes for grocery shopping they leave the stores via the usual entrance, but in the bags they got food products that was about to be thrown out the back. - Food waste accounts for ten percent of the world's carbon dioxide emissions, which is four times worse than the aviation industry, says Filip. On this Day of International Day of Awareness of Food Loss and Waste (IDAFLW), Sopköket shared their philosophy on how to use food that can not be sold any longer, for some reason, remaking it into new delicious dishes. New is that dishes will be made, frozen, and sold in the same store that the “food waste” came from. Sopköket is also sharing by giving meals away to vulnerable. Way to go!

Few things are more important than the traditional Julbord (Christmas food buffet) in Sweden. People have it with their family on Christmas eve, but also with their colleagues at work and maybe even with their friends. It usually consists of A LOT of different meats and fish but also: a lot of food waste. The catering company Sopköket (the waste kitchen) based in Stockholm has decided to offer an alternative to this waste. This year you can order a Julbord made of products that otherwise would have been wasted by supermarkets and food shops from them. Their Christmas buffet contains up to 95% salvaged ingredients and they have a zero-leftovers vision eaning that they will provide doggy bags to the guests and/or take care of donating the food that is left to those in need. They calculate that a 70 people buffet from them contributes to approximately 50 kg of reduced food waste. Are you organising a julbord soon? This is a great option climate-positive option! The past year has been our biggest challenge so far. 90% loss in catering, restaurant and large parts of the team let go. Today we celebrate! Sopköket 1 of 3 finalists in "Sustainability Contribution of the Year" 2020 by "Nätverket Hållbar Besöksnäring"! 😍 🙏 ♻️ We share the finals with Botildenborg and Ecosightseeing. 💚 💚 2020 has been a year filled with turmoil. We had to let go large parts of the team as our catering and restaurant lost 90% in revenue. You deserve climate love because in my country of Canada food waste is a big problem and I love the fact that you are doing something about it in your country. I believe that pesticeidesand GMO's are contributing enormously to food insecurity, cancer rates, bee declines etc etc. and organics are a wonderful thing indeed. In the 1990's I planted many trees in my province of British Columbia and I think the more trees planted the better so thank you, merci, hyshka, miigwich, klecko klecko, massi, merci and gracias. There are over 150 or more unique ways to say thank you in B.C. alone. Thank you Sweden and thank you Sopkotet. Cheers!

I want to give the restaurant Sopköket and Filip Lundin's big 💚 for their excellent initiative that partly is saving their own business and, at the same time, create significant benefits for those most affected by Corona (elderly, at-risk groups, and health professionals). Do as I. Buy one (or more, I bought ten) supper from Sopköket and they will make it available to anyone in need. Keep the economy going, save food waste and help a needy one at the same time.
