Kabarak University students converting grass to flour
Believe it or not kabarak university students are converting grass into edible starch and are able to produce flour.
The raw material, in this case, is particularly Bermuda grass, which after collection, is washed and dried before the grinding process. They say the grass ought to be dried for at least four days, after which it would turn brown. Enzymes are added to enhance the flour's nutritional value, plus making it friendly to the gut.
The idea is the brainchild of Faith Wandia,25, a Master's Degree in Business Administration, who was motivated by the number of people succumbing to hunger as drought ravages the country.
Wandia thought about converting the food component found in grass, cellulose, into edible starch to curb the food deficit.
The students have been carrying out tests for a time, and are now convinced the product is safe for human consumption, and could be a game-changer; an unprecedented competition to the maize meal known to be Kenya's staple food.
If this flour is certified by Kenya bureau of standards (KEBS) in Kenya it will only mean cheap flour for Kenyans and the world in this hard economic times. If this idea is utilized in totality the food insecurity challange will be dealt with entirely.

I watched it yesterday at a citizen Tv and I have been following their progress since they appeared in the media back in April. They have a great idea and the government should embrace such innovations and support them and in reciprocal it will help fight hunger in East Africa and furthermore create work opportunities to many.
