This circular gin removes more carbon dioxide from the atmosphere than it emits

What if your gin and tonic could help save the planet? 🍸 Arbikie Distillery in Scotland has created a climate positive line of spirits called Nàdar (meaning nature in Gaelic). Thanks to the use of the humble garden peas, the gin removes more carbon dioxide from the atmosphere than it emits. Spirits tend to be made by fermenting grains or crops requiring synthetic fertilizers to grow, but the use of peas avoids the carbon emission created by these fertilizers. Peas are even helping with soil quality, leaving the soil richer in nitrogen, in a regenerative process. And after the distillation, the peas by-products are used to make high protein feed for cattle, in a circular process. As the article underlines, peas take more space than wheat but "Arbikie is a working farm, where peas were already grown alongside other plants to add nitrogen to the soil. By producing gin, it has come up with a high-value use for peas that would otherwise go to waste".
