The Live Green Co. is a Chilean food-tech startup that is using technology to create plant-only solutions with the same functionalities as today’s food additives. Their goal is to recapture and reappraise the lost knowledge of native populations regarding the benefits of their native plants. To do that at speed and scale, The Live Green Co turned to AI technologies that will allow to analyze flavor combinations, amino acid sequences, protein structures, and other elements faster and more precisely than any human. This will lead to identify and manufacture plant-based alternatives to not just meat and dairy but also the synthetic ingredients many food items are riddled with, both for environmental and health reasons. They use their own AI recommendation engine Charaka which essentially merges traditional Indian plant science with modern technology. The system catalogs the world’s knowledge of functional benefits of native plants then analyzes patterns in these plants’ properties to find combinations that could be used to replace animal proteins and synthetic additives. There are more than 15,000 plant profiles currently in Charaka along with roughly half a million data points.
